Abstract
This study aimed to verify the food consumption in the breakfast meal in a pediatric inpatient unit of a university hospital (HPU) in southern Brazil and to evaluate the eco-efficiency (EE) of the raw materials used in this meal. This is an observational case study using secondary data. Data were collected on eight working days between October and November 2021. The consumption of the constituent items of this type of meal was evaluated, including types of drinks in general and solid foods. The characteristics regarding gender and age groups of the public who received this meal were also identified. Five types of calculations were used to assess EE. The variables used were: financial value, caloric value, amount used, waste generation and water footprint (WF) of the food served. In the period evaluated, 95 patients age between 6 months and 17 years were identified, 55.7% of whom were male 187 breakfast were delivered, of which 50.8% were not consumed. In total, 20.42 Kg of products of animal origin and 14.35 Kg of products of plant origin were offered. Animal products represent 91,6% of the total WF and presented the worst results in the EE calculations. On the other hand, the breads/cakes and complements food groups obtained the best results in the EE evaluations. The use of EE calculations can be used as an environmental indicator associated with the factors involved in the consumption and waste of meals.
